Perfect handle, perfect blade
Wusthof has been making some of the best knives in the business for two centuries. This 12 cm (4.5") utility knife is from the Wusthof Culinar line, introduced in 1999 for professional chefs. The blades are from the same high carbon stainless as Wusthof's classic knives, while the handles on the Culinar line are of 18/10 stainless and provide a more ergonomic shape for kitchen use.The handles truly are more ergonomic - the difference is much more than just looks. When I pick up a Culinar knife, it is as if the handle molds itself to my hand, becoming an integral part of me rather than a mere implement. When I had the traditional Wusthof Classic kitchen knives - the ones with the black handles and the three rivets - I hardly ever used the utility knife; I usually used a spare steak knife instead. When I replaced those knives with a set of Culinars, I gradually started using the Culinar utility knife more and more. I use it at every opportunity now, and it must be because the handle is so much more comfortable, since the blade is the same.I initially worried that the stainless handles would feel colder than the composite handles of the Classic knives. This turns out not to be a problem. In fact, if the knives are cold, the rivets and the edge of the tang on classic knife designs - Wusthof and otherwise - actually feel much colder than the alloy used for the handles of the Culinar line, likely due to differences in thermal conductivity. As other reviews mention, the handles don't seem to get slippery; that may partly be because of the shape, and may partly be because of the brushed finish on the handles.For those small jobs that come up constantly - everything from cutting small vegetables to slicing a snack to opening amazon.com boxes - this is the perfect knife. If you can afford the price, you won't regret getting one.

Beautiful knife, long story
Apologies to Amazon, but I got this knife new from an on-line auction (for 30 bucks) and here's the story. When I received it it had a noticeable wire edge on one side of the blade. (if you don't know the term, this results from the knife being over sharpened on one side) I spent a good 15 minutes with my Smiths sharpening system (check that out too) and achieved a superb edge.Now, the knife feels great in my hand and is outrageously useful. Good as a paring knife, I use it to make salads. It slices tomatoes, onions, carrots and peppers flawlessly. Works fine as a boning knife, makes a great steak knife, It's beautifully balanced, nice to look at, and my experience with Wusthof leads me to believe that it will hold its edge and last a long long time.If you have several knives, you'll still reach for this one often. If you only have a couple of good knives, this is one of the best to have.

excellent, well made, nicely balanced
I am pretty frugal, and spending more than $50 on a single knife seems excessive to me. However, I was convinced because I went over to my friend's house (who is a chef) and he had a set of these knives. Used them and fell in love right away.I bought this one because it is a great size: I much prefer a smaller knife to the traditional chef's sized knife. Like other reviewers, I was concerned that the handle might be slippery when wet, but it is no problem whatsoever.I did not buy mine from amazon, rather the behemoth online auction merchant. I paid $40 and do not regret it at all. I feel like it was well worth the price for a piece of very nice cutlery.

Culinar 4.5 in Utility/Steak Knife
I have owned Wusthof Classic white knives for 35 years.They are such a pleasure to use.I bought 6 of the Culinar style 4 1/2 in utility knives and use them as steak knives because I prefer the angle of the blades for cutting.They are perfectly fine to use this way and have seen other expensive steak knives with the same angle on the blades.

Best single knife.
I wanted to replace my cheap knife block set with a great one that can last a generation and found Wushtof Culinar Series to my liking. Initially, I thought the metallic handle could be slippery. So, I went to a local store and tested it and found it to be be very very grippy and solid to hold. I liked how these knives curve on the handle. That helps handle get a perfect grip in the hand.You will not regret spending money on this.

This was to replace the exact same knife that, after 10 years, needs proper sharpening. Big fan of Wusthof and this knife is fantastic. Great edge and perfect weight
