Easily the best water kefir grains I've had
The media could not be loaded. Nice big, healthy water kefir grains! I've used a different brand in the past and I'd say it took me over a month to get the grains as big and healthy as these were 3 days in. While you're not usually supposed to use the very first discard after rehydrating the grains, I could tell mine would have no problem carbonating - especially since I'm in California's central valley and it's summertime. So I did an organic cocoa & organic coffee cold brew 2nd ferment. It was done in 24 hours and you can tell from the picture and video that it was very bubbly! Tasted a bit like a tootsie roll too! It's super fun to play with flavors. My family loves PomWonderful Pomegranate & Blueberry kefir along with the mocha kefir. It does really well with pineapple juice, coconut water, and fresh fruits like cantaloupe and strawberries.Make sure you use bottles specifically made for the pressure of carbonation, store them well, and may you never have an explosion in your pantry or a kefir shower right in your face. Bonus tip: if you unload the dishwasher at night you can store your second fermentation bottles in there and at least know that if there is an explosion, it will be confined. You can pick out the shards of glass, reload the dishwasher and done! Far better than cleaning out the pantry, taking soggy labels off canned goods and having to re-label all of them. Ask me how I know! Or you can put them on the floor of your pantry sitting in your largest pot with a grocery bag covering the bottles and tucked inside the pot. If the plastic is outside the pot the potential liquid explosion wouldn't be confined to the pot itself and would drip down onto the pantry floor. It kept one of my 3 explosions from being a big deal.I've always thought water kefir grains would make for a great science experiment for school. And these grains in particular are wonderful. I would definitely buy them again if I ever need more though the ones I have now are multiplying like crazy. I feed them organic cane sugar. They also get treats like molasses, pink salt, baking soda, a bit of clean egg shell, or organic raisins. I call them my minions and feel bad when the babies get washed down the drain.

I had my doubts
I've brewed kefir for years but took a break and decided to freeze a portion of the grains I had. I didn't get back to doing it for about a year and the grains never recover and slowly died completely.I didn't know you could dry them so had my doubts about these. But ever the optimist I gave these a shot, first just rehydrating them in distilled water before adding sugar and molasses (all brown sugar is is white sugar with some molasses added back). The first batch didn't do much, I let brew for around 56 hours and the water was still pretty sweet with not much in the way of fizz. The second brew was better, after 48 hours it had some fizz, not much, and the water was not quite as sweet. The third brew was about what I had been used to, the water was only slightly sweet with a bit of tang and a good amount of fizz and the amount of grains seems to be increasing. So, give these about 3 brews to get fully back to life, use some brown sugar or some molasses to give it some nutrients and they should do just fine.Side note, it's December in Chicago and the cabinet I am keeping these (you should keep it in the dark) is pretty chilly so I've been letting it brew a bit longer than 48 hours and quite happy with the results.

Productive and delicious keffir
Great keffir grains - it brews up some delicious water keffir. My wife and I drink it every day.In my hot tropical environment (~80F all year round), the grains seemed to double in amount every month, and produces more alcohol and acetic acid because of the heat. 1-day or 12 hour fermentation time is all that is needed here. I was able to slow it down for a less alcoholic taste by adding double the amount of water (8 cups instead of 4), while keeping the sugar amount the same (4 tbsp of pure cane sugar, and 2 tbsp of coconut palm sugar, with a pinch of sea salt). But the grains don't stay large and together this way - they turn smaller and increase in number. For going away on vacation, I've been able to store it in the fridge with water and sugar for a couple of weeks and revive it afterwards just fine.

Worked like a charm
Worked like a charm! I appreciated the nice packaging and the instructions that came with the grains. I did not use the instructions though, tap water + brown sugar did the trick.

don't bother with this one
I read the reviews before purchasing and knew I was taking a chance, but I bought the kefir crystals, anyway. Well... I have extensive experience with water kefir. I had it for decades before getting rid of my old crystals during a cross-country move. We love making lemonade with water kefir, but I haven't found anyone locally to get the crystals from. Hence, my purchase. Disappointing! It is REALLY easy to grow kefir crystals. They don't require much at all, if they're healthy. Any sugar and water will do it. Very low maintenance. I kept mine in the fridge for YEARS and they still grew exponentially. These water crystals, though, are high needs. I have tried several batches of sugar water, including the molasses as they recommend. They are simply NOT producing. I have seen a little growth (I have a few more than I did when we started), but they are not fermenting the way they should. It's been weeks and I still have no water kefir we can drink. This is really unusual, and I can imagine it turning folks off to the wonderful benefits of water kefir... because I can't get to the benefits with these crystals. Waste of money. Be warned.
