This cookbook recently arrived and I haven't had time to try the recipes yet. But, what I always do before trying any recipes is to peruse the book. I love how this book is layed out. I love that the author includes family recipes including his own. Included is a hot dip recipe created by his wife, (which, by the way, I can't wait to try). I love everything Louisiana and New Orleans. Many of these recipes capture the true spirit of this one-of-a-kind region. There are many, many of my all-time favorites included. Also included, are recipes from some of the most well-known and well-established restaurants. I can't wait to try Drago's grilled oysters the beignets recipe from the Cafe Du Monde. Aside from the extremely well-written recipes are the personal anecdotes shared by the author. While they shouldn't be a selling point for a cook-book, I found them refreshing and they brought me into his experiences thus making my experience personal, too. I love the historical facts and the glossaries explaining things from ingredients to a glossary. I am an avid cook. I am not a professional chef nor do I have any professional training. What I do have is a passion for cooking and deep love for this region. Tom Fitzmorris seems to incorporate both in this book. I love it. I would buy it again. I would give it as a gift. I would highly recommend it.

"Tom Fitzmorris's NEW ORLEANS FOOD"
Although I haven't had this cookbook very long, I love it! It is simply a great read! I know enough about cooking Creole and Cajun food to know that the recipes are authentic and will "work"...but at this stage I am so enjoying the 'notes' before each recipe!Fitzmorris is a man that truly loves New Orleans food and can write about it! Its a very good read even if you didn't make a single recipe, as written, but used the book as an inspiration for your own concoctions.The "whys and wherefores" that he made this or that substitution are very well explained. This makes it easy for the cook to make substitutions when they can't get certain ingredients in their particular neck of the woods!I know it is kind of strange to review a cookbook without actually cooking anything in it...but I swear you'll just love reading it!

Great cookbook, especially for newbies like me!
I just got my cookbook this weekend (thanks amazon!) and wow! The first recipe my girlfriend and I decided to try was the Grillades and Grits. It listed it as a breakfast dish but we had it for dinner and mmm mmm good. The directions were easy to follow, and i especially love the little section in the back that details how to make creole seasoning from scratch. I think next weekend i will try the stewed chicken with brown gravy over rice!I only wish i was still living in new orleans because a lot of the seafood ingredients are very expensive here in Virginia. Anyways...buy this cookbook if you love Creole/Cajun cooking and want to have some fun sunday afternoons filling your home with the aromatic flavors of the south!

Great Book for New Orleans' Recipes
I am a native New Orleanian and find this cookbook very, very good. I have tried many of the recipes thus far and have been please with each. Quite a few of these recipe's have resulted in reminding me of my grandmother, mother, and aunt's cooking during the time I was growing up in the New Orleans area (this was an unexpected but pleasant surprise).Mr. Fitzmorris begins each recipe with historical background and/or recollections of his mother preparing the dish. I have found that the recipes are easy to follow, have sufficient detail, and list the ingredients in the appropriate/logical order (not found in many cook books).I highly recommend this book to anyone interested in preparing authentic New Orleans meals.

Best Southern Cookbook
This is my second copy as the first one is almost unreadable. Great recipes and wonderful food. The Orange Cheesecake is the most requested dessert I make.

DELICIOUS is all I have to say!
This is my favorite go to cookbook. I have cooked several recipes from each section and ALL have turned out wonderful. I don't find it hard at all to follow the recipes, some are a little time consuming, but sometimes that's would it takes to cook good food. The fish dishes are excellent. The rootbeer ham is now a staple at Easter and Christmas. If you are familar with southern and New Orleans food and love it as I do, then this is must for you.

I left New Orleans after 45 yrs with no favorite cookbook. A family member had purchased this one on my recommendation. I kept borrowing it but now I have my own. Tom Fitzmorris has been a reliable source for years in New Orleans and I really enjoy his added info about these recipes and especially his anticdotes about growing up with many of them.

Tom Fitzmorris is the foremost expert on food in New Orleans. With his meaty three hour daily radio show that has been going for years, he has a tremeneous amount of experience under his belt along with the best of New Orleans cooking. What a pleasure it is to see him with a book about New Orleans food!There is no one better to show the world how the best of New Orleans cooking can be done by anyone once they have this book.-Lawrence Kennard
