Plug in the roller and turn on low. Use a sponge or towel that is wet. Hold on rollers as they turn. This is the simplest way.

will this cook raw sausage ?

I cooked raw breakfast sausage on it. It took about 35 minutes. Was awesome

how many watts is this unit?

Pretty sure that 110 answer is volts. From my googling it appears it is 230 watts.

Just received and need to know if the cover can be un the down position when on the high setting? Will this harm the plastic lid.

The lid is supposed to stay down when cooking- even on high.
