im looking to do dried roots,vegies, fruits... rather than grains, can this do it? (taro, cassave, ulu)

I really don't think I would recommend that. The input on top has rather small opening and the moisture still present in the fruits/veggies will most likely gum up the grinding stones.

can this grind corn for cornmeal?

This machine is made for "dry" grains. High oil content seeds, nuts (and corn) will clog -- a special corn mill will work.

Is there any odor coming from the wood? Does the wood have any kind of application with stain or any thing else? We have chemical sensitivities.

No odor. Not sure of the finish or stain.
