I'm using these to give my plant humidity but will the drainage hole suck up too much water from the saucer? Thanks.

The drainage hole allows excess moisture to drain from the soil so the plant's roots don't rot. When the soil is dry the water in the saucer will be absorbed back into the soil. To use the saucer for humidity place some small stones or gravel in the water so that the plant sit above the water line.

will these work with a 5 gallon bucket??

Most 5 gallon buckets such as the home depot orange paint bucket, the lowes blue one, and the true value food safe ones are between 10.125 inches and 10.4 inches at the base. So yeah these will fit almost all 5 gallon buckets but im willing to bet there are 1 or 2 brands it wouldnt fit (i did look it up btw cause i had the same question, my peppers and tomatoes are in the true value foodsafe ones)

Received today. all 6 stuck together to the point i cannot separate. recommendation for me or will i have to return?

The set I received was also stuck together. I had to pull them apart aggressively then they were ok to use. Get your finger under the lip of the top one and work around the top until it loosens. Yes, a pain in the ass but it worked for me. They are great quality otherwise. If this doesn’t work then I guess you will need to return to the supplier.
