Would these fit in a Voss water bottle?

I think so, but not all of them.

What are the dimensions of these sharks? Would they fit through the mouth of a 2L soda bottle (whose opening is approx 1" or 2.5 cm)?

Some might. Depends on the flexibility of the fins.

Do all of the tubes include a playmat?

They do not, we are phasing out the playmat in our tubes.
