I needed a new boning knife and did not want to spend over $100 for a well know German brand. This knife is beautifully made, extremely sharp, and very reasonably priced. It is not as flexible as some boning knives but I use a filet knife for those times when I need more flexibility. This thing can power through cutting up a chicken, or butterflying a leg of lamb in no time! A great value!

Beautiful, high quality knife. Razor sharp right out of the box, well balanced, and the handle is comfortable in the hand. The G10 grip should make care and cleaning super simple too! Highly recommended.

Nicely balanced, comfortable to hold, sharp and sturdy. Looks good too. And the packaging is excellent. However the product info says "A boning knife is a kitchen knife that contains a sharp point and a narrow flexible blade. " . I don't think this blade is at all flexible. So a great knife, and I'll be using it for all sorts of kitchen tasks, but not really a boning knife.

This was a Christmas present for my foodie son who has been involved in hospitality services for half his life. My feedback is based on his complete satisfaction and pleasure in using this knife. I know there are cheaper alternatives (I tend to use a pair of Victorinox so I always have one sharp and one ready to sharpen. They work fine, but you have to admit they aren't very aesthetic. The Kessaku is much closer to a piece of functional art.

what a beautiful boning knife......I can't wait to bring a rack of lamb back from Costco and show off this knife at the table to my guests. Very very sharp and a nice balance. The highly polished handle will keep microbes at bay and it comes in a very elegant presentation box......almost a shame to put the knife in the rack with my other tools.... I will certainly take a peek at the chef and paring knife for my next "gift"

This blade is very sharp. Feels comfortable in your hand. I use it to debone chicken, cut roast beef into very thin slices with ease. This is the best knife I own. I Will buy one for my son as a Christmas gift. I am very satisfied with my purchase. When I need knives in the future, I will definitely buy them from this company/manufacturer.

I mam extremely pleased with this knife. It is much more than I expected it to be. It came in a beautiful package and is very sharp. I used it to take the silverskin off a skirt steak and it cut as if it were going through butter. I used it to remove chicken from the bone and it was simple and glided through perfectly. I plan to purchase many more Kessaku products in the future. Couldn't be happier.
