Hi AK - Yes! Gelatin can definitely be used to thicken jelly and jams! You can use 2 tablespoons of gelatin for every quart of berries. You would add the gelatin mixture (gelatin dissolved in warm water) to your berry mixture after the berries are boiled and before you stir in the sugar for the mixture to set.
