Can anyone recommend a 3 gang wall plate covering that will fit this?

If you mean you are going to put 3 units side by side, then go to Home Depot or any hardware or electrical store. You may not match color. Otherwise I can not help you.

What gauge of bare speaker wire do these accept? 12 gauge OK?

My wire run was over 40 feet and I used 14 gauge. My system works fine, it all depends on how much power you are putting out, and how much you require. I found tables that gave recommendations for wiring requirements.
