Give it a try.. you’ll be surprised.
So it’s not real pasta, but for being a diabetic and someone that needs to watch carbs and sodium, honestly this is the next best thing. It is packaged in some liquid that does have a slight smell to it, but all you need to do is run it under water for about a minute and it’s gone. It does obsorb the flavor of the sauces you put it in, so you do not get any other taste then the sauce you mix it with. The only thing I would suggest is boil it longer then the package suggests.. After 11 minutes of boiling it still had a slight crunch to the noodles, like a raw carrot has when it is just about fully cooked

Artichoke noodles are great
I stated buying the noodles a few years ago. I just recently found the brand on Amazon. I will buy the noodles from Amazon no problem. The price is not a huge break, but with the purchase instead of looking foot it in grocery stores.

Is it pasta? No. Is it tasty and texturally pleasing? Most Definitely!
I should preface this review by saying I'm a big fan of hearts of palm. I can eat them right out of a jar. So this product intrigued me from the start. And given realistic expectations, it did not disappoint. I created a tasty "pasta" dish using these noodles, some quality jarred tomato sauce, and vegan sausage. I rinsed the noodles well, but I did not soak them in milk (as they suggest to get rid of the palm taste). I like the palm taste and really, once you add other ingredients to your dish, the taste moves way to the background. As you can see from the photos, they are the shape of linguine, however, each piece is only about 4 inches long. They remain firm, giving something close to a pasta al dente feel in your mouth. And sauce sticks to them. I found them more tasty than say zucchini noodles, but not as tasty as lentil or garbanzo bean noodles. Hearts of palm are basically water, so if you want some real nutritional value you're going to have to add a protein and some good fats, like I did with the vegan sausage. In this context, they are an excellent wheat pasta substitute. They are however, expensive. Each package is maybe 2 servings if the pasta is not the main. For me, it was one big serving.

Not what I expected
The texture is good. It looks like spaghetti, but the taste was so so. It has a vinegar Based taste to me. I do not think I will purchase it again. I will go back to making spaghetti using zucchini with my Veggetti spiral vegetable cutter that I also use. I purchased it at Walmart.

Taste is really good
Very good, easy to use. Just heat up after rinsing and use any favorite pasta toppings. Just as satisfying as pasta and also has flavor. Stays firm, doesn't get mushy like other low carb pastas. We'll be trying the other Palmini pastas and rices. I like the minimal ingredients.

Best Boiled 10 Mins+, Not Mushy or Sticky, Good Plant Option
Our daughter is vegan and wants to limit processed carbs so we try to cook plant-based pasta dishes she can eat, and ideally us as well. We have tried several in the past which she mostly hated because often times they wouldn't hold their shape, would be gummy, taste funny, were mushy, or super hard at the other end of the spectrum. And I can cook all kinds of dishes, so I'm aware of lengths of time to boil and how to check if done. These required a little tweaking if you don't want too hard of a noodle with a little crunch - they remind me of the consistency of bamboo shoots found in many Asian dishes. I was a little worried if I boiled too long, they would become too soft, but I soon discovered it would be hard to cause that to happen even if you tried. You can boil these a long time and they remain firm. So I boiled them about 7 minutes, and I think they could have gone a little longer like 10 minutes easily. I would have liked them a little softer, but as part of a vegetarian, vegan, or any meal these can work really well. They only make about 2 small servings, but I was happy to see that they are responsibly harvested so both a healthy and sustainable option. In the photo I attached, I boiled them with some mushrooms just to kill two birds with one stone, took the photo without the other ingredients so you could see the noodles well, and then I added a homemade pasta sauce with tomatoes, herbs, and garlic (added cheese for my serving) and the dish turned out delicious. This is definitely a good viable plant-based substitute for typical high-carb glutenous pasta.

Great substitute
Love this stuff. Just like pasta noodles, but a little crunchier.

A Review of Palmini Linguine: My Journey from Pasta Lover to... Palm Enthusiast?
Rating: ★★★★☆ (Four stars for effort, one star deducted for making me question my life choices) I bought Palmini Linguine because I wanted to enjoy "pasta" without the crushing weight of carbs or the subsequent food coma. The product promises a "remarkable resemblance to regular noodles". My brain, however, had other ideas. The Unboxing Experience: Upon opening the can, I was greeted with a unique aroma. It wasn't the smell of a Tuscan villa; it was more the scent of a moderately seasoned forest. "Rinse well!" the internet whispered in my ear, so I rinsed them five times, just to be safe. I felt like I was purifying them of their vegetable sins. The Verdict: I will give Palmini this: it is an excellent vehicle for sauce. The sauce does 90% of the heavy lifting here. I used a hearty Alfredo, and it held on for dear life, transforming my "hearts of palm" into a passable impersonation of something I’m supposed to eat. If you go in expecting an actual bowl of linguine, you're going to have a bad time. If you go in expecting a highly versatile, low-carb, gluten-free, keto-friendly vegetable that you can drown in cheese and garlic, you've found your new best friend. It helps you stay on track, but it never lets you forget the delicious, carby life you left behind. Highly recommend, but keep your expectations in the vegetable aisle, not the pasta aisle

Like pasta?, but it's not!!.....
Looks like pasta, but it isn't. Tastes like pasta, but it isn't. Vegan alternative to pasta. Always 'al dente'. I cooked and ate it as pasta, and as such it was good. A bit pricey but worth the extra!!, definatly worth it. . .
