Is there a way to have it on all night? Even when i dont use the timer it switches off after a while

No there isn't. If you don't select one of the pre-set times, it switches off after 4 hours.

Will this work on a pitched roof or is a flat roof nesserary

Flat roof (ceiling) will be preferable. The way it will work witn a pitched ceiling is when the device transmits its beam of light from a point that is at the same angle of the roof. This to prevent any distortion of the picture.

Does the projector ball make much light or does it make hard to fall asleep because of the machine light and loudness? ?

No, it's perfect to sleep because the light is very low, just enough to see the stars. It makes a little noise but quit discreet and you can cut the rotation to make it more silent
