Which strength would be the best for a beginner bari sax player? I've played alto sax for 7 years and was wondering if i could start off at a 2.0

It's a little dependent on what strength you play on alto. In my experience, you want start on bari with a strength lower than what you play on alto. If you play 2.5 on alto, then 2.0 would be fine, but if you play stronger than 2.5 on alto, you can probably adjust your bari strength accordingly.

You can't go too far wrong with original RICO reeds.

I've played sax (soprano, alto, tenor, bari) for over 30 years. There is a lot of hype around sax accessories especially reeds. I have always been pleased with the quality of Rico brand reeds and have found my rejection rate for them to be no more than 10%. You can get more consistent reeds from other brands but you will be paying considerably more $$.
