How long will this moss keep if not planted right away? How should it be stored?

I kept mine in moist paper towels, wrapped in plastic wrap until I could plant it. I think it was about 2 weeks. It did fine.

Does this moss grow well with very little natural light? I.e. in a dorm space with very little sunlight from the windows.

I believe it does, mine is outdoors at the base of a tree trunk that is growing branches all around it, it now looks like a bush, but my moss is still alive.

Can this be used for a bonsai tree?

Depends on what you mean, as a substrate prob not. Bonsai have pretty specific requirements. Generally akadama and specific bonsai soil. But it would work great for a cover over the dirt, or maybe when you're getting seeds to hatch
