How many pieces of straights and curves does this contain?

1 x Right Hand R1 Manual Point (12000) 1 x Left Han R1 Manual Point (12100) 9 x 300mm Straight Track Section (10000) 2 x Radius 1 Curved Track Section (11000)

What radius are the turn outs of the points?

LGB list them as R(radius)1 which are 30 degrees ie 12 such curves make a 4' diameter circle. There are also, R2, 3 and 5, which increase in angle size with the R number.

Are the points sprung or weighted so that they return to their original position once a loco has pushed through? And are they live or insulating?

They will return. They are live.
