I have never used it because I couldn't open it. It still has the plastic guard on it. How do I open it? I have small hands. Doesn't budge.

Yes it will open. On the end of the red part-the guard there is small lever/clip with marks on it. You'll need to push this in two different directions. The red plastic guard will then slide open in two different directions. Plus the blade will also snap out when you slide it from the clip. It will all "pop" or "click" back together when re-assembled. It may take some practice, but it works and so far we've had our apart and snap back together many times without mishap. It cuts great, and as we remind our kids- 'don't cut metal on metal or you'll dull the blade'.

Is the blade double edged?

What's with the RED? Where can I get it in White or Black??

Even in kitchenware stores, I've only ever seen red.
