If I were to use these on a car audio project. What size would be suitable for connecting speaker wire together?

Standard large gauge speaker wire is only 22 gauge so anything 22 gauge or larger for standard speakers will be good.

Will these work with 10awg wire?

To answer your question yes but it's a tight fit. The 30 amp limit is the spec you don't want to bypass. I would personally go with the XT 90 if the bigger size isn't a factor

If connecting to a car speaker. would you use the xt90, xt60 or xt 30?

It depends. If it's for power and ground for a large amp I would use the 90. If you just want to make disconnecting your stock or aftermarket stock type speakers simple, I would use the smaller sizes. I am only familiar with the WT90 which I used to connect an e-bike to a 48 volt battery.
