I am concerned about buying overly processed foods. How have these quick oats been processed to make them "quick"?

Quick cooking oats are cut into smaller pieces than the regular oatmeal (either steel cut or rolled). That means it takes less time for the heat and water to get all the way through the oats, so cooking is quicker.

Pressure cook for 12 minutes in an electric pressure cooker. If yours has a timer, put in the oats and water at bedtime and set for the morning. Wake up to a hot pot of porridge! No standing, no stirring. There’s no evaporation in the pressure cooker so cut the proportion of water. 3 cups water to 1 cup of oats. Open the valve or allow to naturally decompress, either way will work.

Much better than standard porridge

I love this oatmeal. I grew up in New York City, and this was something you'd find in specialty shops there. It's much different from rolled oats, because it takes a lot longer to cook (not the 5 minutes it says on the can), and it doesn't get as mushy as standard rolled out flakes. It's flavorful and delicious, and I love cooking this up for a hot breakfast on a cold morning.
