How big does the pocket square have to be?

The size of our pocket square holder is: 4.8 x 3.5 x 0.04 Inches, any pocket square that fits this size is fine.

do folding directions come with this?

Yes. There are directions for some basic folds but any fold that you currently use will fit in this handy device. This is a game changer.

My pocket depth is 3.5 inches. Will this work?

i find the holder itself is fairly good but sometimes the material (silk) of the pocket square might be too soft to always maintain a certain appearance (i usually go with traditional fold) which can be slightly misaligned at times in the pocket.

Different suits have different pocket depths, so how can we use the pocket square holder with coats of different pocket depths?

The holder most likely will not stick out of the top of the suit pocket so the question is how to adjust the pocket square so it doesn't sink down into the pocket and be fully visible. There are several ways, put a pin through the inside of the jacket to hold it, fold up a piece of fabric for it to rest on in the pocket, fold the pocket square in such a manner more sticks out of the holder, attach a paperclip between the square and jacket securing the holder in place. Jusst a few ideas.
