What are the Gefen Noodles made of?

I no longer have the packaging, so I can not answer you specifically, but I do know that the do NOT contain wheat or gluten as my husband has celiac disease. They are not named egg noodles, so I would say they do not contain eggs, but not certain. I can tell you the were very good and not slimey or mushy if cooked correctly. I wish they were easier to obtain locally, but I could not convince the health stores we shop at to purchase them. So I continue to order online. Hope this helps.

Can I make kugel with the gluten free wide noodles and will anyone be able to tell ?

I didn't, especially like these noodles. They didn't cook as soft as they should. Some of them stayed hard while the rest got sticky and soft. I had to switch to a different brand of Eggless wide noodles.
