I used this for my science fair project. i tested to see if the tds actually decreased when you put it in but it doesn't. did i do something wrong?

The majority of TDS are going to be calcium and magnesium, and the advert specifically says those are left in the water, so you might not expect TDS to decrease by much.

Is it ok to use these in stainless steel water bottles? Does it react poorly with the metal?
