It includes a brief introduction to one-pot cooking and then recipes for the skillet, sheet pan, pressure cooker, air fryer, dutch oven, slow cooker and grill. Each of the recipes is laid out on one-page for easy cooking and includes a full-color picture and nutritional information, which I found very helpful. Gina also includes useful instructions for converting recipes from one appliance to another, in case, for example, you didn’t have an air fryer or just wanted to use the oven instead. Spicy Shrimp Tempura Bowls – Wow! These were amazing and quick to prepare! I’m drooling over the Spicy Mayo and Asian Vinaigrette Combo as I write this. My husband has a seafood allergy so we subbed the shrimp for chicken and these came out great! Pot Roast with Potatoes and Vegetables – Another Wow Recipe! I wouldn’t quite call it a one-dish recipe because it is far tastier if you sear the beef and sauté the onions before throwing everything in the slow cooker. We left the potatoes out and served with mashed potatoes on the side and this was incredible for a minimal amount of effort. Vegetarian Butternut Chili – This was very good and so simple to make! Dump a few things in the slow cooker, turn on low, and come home to dinner. Mine was a bit watery, so I might leave the vegetable broth out next time, but this is a tasty vegetarian dish if you are trying to cut down on meat. Creamy Butternut Pasta with Spicy Sausage and Sage – I’d argue that this one is far easier to make if you don’t mind dirtying a few dishes. Roast the butternut squash at the same time you cook the pasta and the sausage, rather than using one-pot and cooking them one after the other, otherwise, the pasta will be cold be the time the sauce is ready. That said, this was very good. Almost too good to believe it’s really healthy! Overall, this is a great cookbook for easy and healthy dinner ideas that come together quickly and will appeal to a wide audience. Review: Great book for busy folks and/or the youths starting out - So, like most modern Americans, I too work 9-5 and what a way that is to make a living. However, my job, like most Americans in my age group, is very stressful. So, often, I come home and I don't have the energy to cook a 5 course meal or even do a protein and a side. This cookbook is mostly 1 pot meals for Instant Pots, slow cookers, air fryers, skillets, and ovens when the weather/seasons permit. There is also stuff for dutch ovens. It is such a good book! So, I have made at least three of her recipes with more to come from this book: the calzones are delicious and easy to do and a good way to get your vegetables. I also have made her air fryer chicken drumsticks with potatoes. Super good and easy to do with minimal cleanup. The shrimp quesadillas are also easy to do and, again, just a one and done (I use pre-cooked shrimp to make it easier). Wait, I also did the rosemary chicken slow cooker recipe, low and slow for like 8-9 hours and when I came back from work to take the chicken out, my whole apartment smelled like rosemary chicken... plus it was super delicious and fell right off the bone! These recipes do mix in proteins and veggies so you get your daily dose of vegetables and because they are one-pan meals, super easy to do and less to clean up. I usually have some leftovers (single person here without roomies), so not too bad to live off for a day or two more past the cooking time. You can probably double the recipe to live off one for a week, though. I saw a potpie recipe I can't wait to try with my cast iron and my oven once things cool down more where I live. I love all of her books, but this one is a must for the warmer months and seasons because it also has salads and using up greens before they go bad is a struggle for me. Great book and worth having, especially if you have just moved out and are beginning to fend for yourself in, say, a dorm or a studio apartment. (Makes a good gift too, if you know someone who is going out into the real world for the first time.)

Almost Too Good to be Healthy

Best Skinnytaste Cookbook So Far
I have been cooking Skinnytaste recipes for my family for the last 7 years. I started cooking from the Skinnytaste.com website, and I have preordered the cookbooks because I love Gina's recipes and philosophy so much. Healthy, balanced eating with whole ingredients is how I've chosen to feed my family, and with Gina's help, the food we eat is absolutely delicious. With that all said, I believe the One & Done cookbook is Gina's best work so far. I love that the entire book consists of dinner recipes. I love how the book is broken down by cooking vessels (sheet pan, dutch oven, skillet, etc). I love that the recipes are consistently delicious and most are simple for someone who has some experience in the kitchen. I also love that my children are being introduced to such a wide variety of foods and flavors. They are learning to love different vegetables, as this book incorporates so many vegetables in a variety of cooking methods and flavor profiles, so although they may not like a vegetable prepared one way, we discover they like it in another recipe. And most of all I love the concept this book is based off of - I only dirty one pan, and it's the pan my food is served out of, making clean up much easier on busy weeknights. If you're looking for a cookbook to begin your journey into healthy eating, Skinnytaste is the way to go and One & Done is a great place to start. No foods are banned, everything is done in moderation, and Gina never skimps on flavor just to save calories and fat. This will be the best money you've spent towards improving your and your family's health!

Simple and accessible
I love to cook, but I also work a lot. If a cookbook comes off as too pretentious or complicated, it will not last long in my house. I just want to make delicious home-made food without having to go to 3 different markets to source some obscure expensive ingredient for an everyday meal. I have this and another skinny taste cookbook, and I can say I've cooked more recipes from these books than any other cookbook I own. It hits all the notes of being simple and delicious. I was concerned from the title that this would be a diet cookbook. There's nothing diet about the flavor where you need to give a measure of forgiveness to the taste because it's lacking. This is home-made comfort food. I especially love the instant pot recipes. Everything comes together so fast and can stay warm for hours. This simplifies the amount of cleanup and time involved to prepare a satisfying meal.

Easy Recipes with Little Prep Work Needed
This is probably her best cookbook to date (including her Meal Prep cookbook). I find that I come back to this particular book the most. As a mom of two toddlers, I find this book to be the most convenient one. Her recipes, as always, are delicious and healthy. I think what brings me back the most to this book is the fact that it doesn't require as much prep work. If you don't have as much time on your hands - this is the perfect book for you. I took one star off because I did feel like so many recipes were similar to ones she had on her blog and there are some recipes that I just haven't touched since I bought the book.

Amazing cookbook!
I absolutely love this cookbook. I have been following and trying recipes from Gina's blog for years. I didn't want to buy the cookbook because I thought I could just keep trying her blog recipes. But let me tell you there is something sooo special about having her physical cookbook in your hands. It is very inspiring, it has given me a whole new breath of fresh air to get me in the kitchen and excited about cooking for my family healthy, wholesome delicious meals. I have cooked 5 of the recipes and the Goulash was a huge hit with my kids, the mini meatloaf's are a crowd pleaser and so easy to make to feed a large group, the chicken cordon blue was so french and fancy, and so delicious, I whipped it up in 15 minutes. I also love that the cookbook is super well organized, it is divided into sections per cooking style, air fyer, sheet pan, etc ( You don't need an air fryer or an instant pot, you can you use your oven or the slow cooker instead of the two former) And I am just dying to try everyone of the recipes. There are lots and lots kid friendly recipes, and I think everyone needs this cookbook in their kitchen, you won't regret it. I really want to buy her previous cook books but I realize I should become a master of this cookbook before the next one. Also, almost all the recipes come with professional pictures and that is my first cook book ever to have that, and I find it so beyond beautiful and inspiring to see the visuals. I love it Gina, thank you for your amazing work.

Best cookbook!!
Oh my god I love this cookbook!! I’ve made the buffalo chicken nuggets repeatedly. I’ve also made the breaded cauliflower nuggets style, which I love. I’ve also made the Korean chicken wings, which were also great. The lemon Parmesan shrimp with broccoli and cauliflower is to die for! I’ve also made the Carne Asada of rice, which are really good too. I have her other cookbooks and those are awesome too. This one is my favorite though.

Delcious, easy and healthy
Delicious and easy recipes. I love the skinnytaste blog and this does not disapoint. It even has real Mexican recipes but with a healthy twist. I do wish there were more deserts but I guess it is not what this is about.

Fantastische Rezepte
Ich habe dieses Kochbuch zusammen mit dem Aobosi Pressure Cooker bestellt. Ich folge dem Blog Skinnytaste seit Jahren und interessiere mich fuer gesunde, kalorienarme Ernaehrung. Ich bin hellauf begeistert: die Rezepte sind schmackhaft, gesund, einigermassen schnell zu machen und meine ganze Familie isst freudig mit. Die Cheeseburger-Suppe wurde schon mehrfach wieder angefragt, aber auch das American Ghulash und die Tomaten-Tortellini-Suppe sind der Hit. Manchmal bin ich ueberrascht (und ich koche sonst sehr viel), mit wie wenigen, einfachen Zutaten so viel Geschmack entsteht. Tolle Tricks, Kalorienbomben wie Sahne lecker und kalorienarm zu ersetzen. Ich werde dieses Buch auch gleich an Weihnachten verschenken. Kann ich nur empfehlen!

Such a great book. The recipes are easy to follow and are delicious. Highly recommend if your looking to lighten up meals but maintain flavour
