Not what I was expecting. I have decent knife skills from cooking in professional kitchens in my youth and have been known to spend hundreds of dollars for knives. I was just looking for a sushi knife to learn with as I teach myself to make western sushi without dropping +$200 on a professional traditional Japanese sushi knife. At first I balked at the price $23.99, but as I read it had a traditional wood handle - my preference - and was made from a decent knife steel. So I pulled the trigger and the knife arrived this afternoon. Was I surprised when I took it out of the box. It is nicely made, sharp, and balanced. It felt good in my hand and sliced through paper like it was not there. Before it arrived, I thought I would replace this knife if I decided to make western sushi regularly after learning, but this is a keeper. Cannot wait to use it!

This knife comes ultra sharp. The steel has a clean ring to it. It is surprisingly light in the hand and comfortable to use. I bought this knife for my wife who is on the shorter side. She says it fits her perfectly and its the one I see her use most often lately.

I have been using it for months and it is an excellent knife. When it comes to resharpening it, you can tell the metal quality is good. It's sharpens quickly and holds it's edge for a while. Cheap knives don't do that.

This knife isn't anything fancy and doesn't have a special forged/hammered steel blade like my other Japanese knives, but it is a good utility knife for everyday use. Stainless steel blade with good weight and a standard Asian style handle make it feel familiar in my hand. The only negative I had with it was the back of the blade was very squared off, which made it uncomfortable against my index finger. But a couple passes across my bench grinder and this has become a goto in my knife block. The stainless blade stays sharp and doesn't rust or oxidize like my high carbon blades, so it is not as maintenance heavy. Plus, I really like a kuritsuki shaped blade, which this has, but is not a full 9" blade like most kuritsukis so it is more versatile for me.

Handle is smaller than some and is perfect for my small hands. The weight is light enough to be comfortable. Sharp and multi-purpose.

This knife is really good actually. I didnt know what to expect buying things on short notice. The handle is really nice. Knife cuts better than any other of these style ive used. I can tell the blade will hold for some time.

Bereits mein achtes Messer dieser Serie von Shan Zu. Auch dieses Mal wurde ich nicht enttäuscht. Das Filetiermesser ist wie meine anderen Messer sehr schön und hochwertig verarbeitet und extrem scharf. Kann diese Messer jedem empfehlen,der Qualität zu einem vernünftigen Preis sucht.
