How long is this good after opening?

I've had it open for a week in the refrigerator and it's been fine. I usually have enchiladas for lunch at least once per week so it doesn't last long at my house. Also freezes well if you put into a freezer-safe container.

Is this large enough to cover a 9x13” pan of enchiladas?

It depends on how "wet" you want the outcome to be. I would use two jars for wet enchiladas and then one jar for drier ones.

Does this have whole cumin seeds or is it cumin powder?

This delicious enchilada sauce seems pretty smooth to me so I'm guessing it's cumin powder or they puree the sauce before putting in the jar.
