Quality Knife, holds edge well
I've only had this for a few days, but We had a good chance to run it through its' paces as we smoked 2 Pork Shoulders and a full Brisket for a party yesterday. As the knife came, it was sharp but i still put a new edge and hone on it using my Trizor system which brought it to a 15deg edge like a razor. The appearance is nice, the core steel is a little thicker than most Damascus but held an edge through a LOT of meat yesterday, every bit as much as i would have expected out of my Dalstrong slicer. The handle is VERY attractive and fits the hand well, it did get a little slippery when it was full of grease, etc but I hit it real fast with some steel wool and that took the slipperiness away quite a bit (and also made the handle not so ridiculously shiny - dare i say it made it look a LOT better, yes i do.) Other than the meat it also caught duty with some onions and did a good job there too, if not a little unwieldy (but that's not the task it was designed for so of course it wouldn't be perfect to handle - the point is it did the job well) For the price, I'm not disappointed, it's definitely on-par with my Dalstrong Slicer (which ran about 20% more) so I'm giving it 5 stars all around. Keep in mind, this is HIGHLY polished Damascus, so if You have high-carbon knives or hammered finish on your existing set this is going to look like a hgh-priced call girl next to them, LOL.

Poor quality control on handle.
Make sure you inspect the handle pins are not protruding out of the handle. When they are protruding, they are sharp and can possibly cut your hand.

Slices as beautifully as it looks
Disclaimer: I did receive this via the Vine program, and my thanks to the manufacturer and Amazon for providing it! I would have passed up spending the MSRP on a single knife, and even the MSRP with the current 50%-off coupon, as I'm used to cheaper knives. This shows me, though, what spending a little more money can get. It's a beautiful knife that turns out to slice beautifully, with a full tang that goes into a pakkawood handle (secured by rivets and not just glued). This is going to do justice as I follow in my dad's tradition of Christmas rib roasts and Easter hams. The Rockwell rating could be as low as 58, which is still good for a knife in this price range (MSRP plus the current 50%-off coupon). There's a little "give" in the blade when I bent it with my bare hands -- and I was ever so careful doing that, because my first test was of its sharpness. Wow, this came SHARP out of the box, enough to pass my standard test of shaving hair off my arm!

My favorite knife, bar none
Beautiful, functional, long, sharp knife. I spend many hours cooking my briskets and like to show off a little bit by slicing them in front of guests. This knife not only looks great but it works even better. The other day, I slightly over tenderized my brisket. Any other knife in my set would cut fine, making thicker slices, but would break apart the meat if I slice too thin. This one cut through it while maintaining the full thin slice without the meat crumbling. The handle has wonderful detail to compliment the Damascus blade. I am very please with this knife and use it at every special occasion I can. As a side note, I used it on crumbly firm crusted bread as well with much better results (as in perfect slices) than my serrated bread knife.

Slice Into Satisfaction
This knife really surprised me in a good way. The handle's got some heft to it, which makes it feel solid when I'm using it. I'm loving the finish on the blade - it looks pretty slick. While it's not razor-sharp out of the box, it keeps its edge well, which is what really counts. I've been using it for all sorts of kitchen tasks, and it's been up to the job every time. It's not some fancy chef's knife, but for everyday cooking, it's been great. If you're looking for a reliable kitchen knife that won't break the bank, this one's worth checking out. It's become my go-to for most of my slicing and dicing.

Long knife
This is a nice knife. Quite long, limiting it's use. I don't have a nice smoked brisket or pork shoulder handy to give the knife a good test, but I will this weekend. I think this will be good for cutting cutting chunks of meat into steaks and chop. The length will make it easy to get a smooth cut across the loin or whatever you're slicing. Comes out of the box very sharp. I can't say how long it'll hold its' edge but VG10 steel tends to do OK. The Damascus pattern is a bit faint but looks good. The handle looks good. -However, the finish work on the handle has noticeable rivet edges, particularly the outer two on one side and then the middle logo rivet on the other. Not a terrible amount, but not flush and something I noticed immediately. -The edge of the handle to the bolster at the heel is also not flush. So, they could do better in the fit and finish department. Nicely weighted and balanced. Seems to be a fairly good deal with the 50% coupon available at the time of writing this review.

Damascus Brisket Slicing Knife - splendid!
As an old guy who likes to cook ( I don't buy prepared food) I am partial to quality knives in my kitchen. Knowing full well that the REAL QUALITY knives cost a small fortune I never pass up a knife which is a very close relative to those I can't afford. The knife under review here is one of those that I really like. I cannot attest it is made of a real Damascus steel๐ (as a boy I read in a book that the secret of making the Damascus steel has long been lost๐). But as far as its quality is concerned it may well be a Damascus knife. Sharp as the Occam's Razor (metaphorically), with a comfortable grip it is a pleasure to use. AND. It is a great gift in a gift quality box!
