How can 1 scoop equal 1 cup of spinach? 1 cup has 157mg of magnesium and yet this label says 1 scoop has 6% daily value of magnesium.

Great question! To equate our freeze-dried organic spinach powder to fresh, we use the numbers provided in the USDA Nutrient Database which lists 1 cup of fresh spinach weighing 30 g (91.40% of that is simply water). When we remove the water through our freeze-drying process, we are left with 2.7 g of dry spinach. Depending on where you look, the vitamin and mineral content of spinach can be very different (this could be due to many things such as testing methodology, growing conditions, soil makeup, harvest time, spinach variety, etc.). Looking again at the USDA Nutrient Database, based on 7 data points, 1 cup of raw spinach contains an average of 24 mg of Magnesium which aligns well with the 6% daily value on our label.

Also note that we are comparing to 1 cup fresh spinach and not one cup of cooked spinach. You may be referring to the amount of magnesium in 1 cup of cooked spinach which is much higher due to spinach shriveling up when it is cooked, and therefore weighing about 180 g instead of the 30 g that 1 cup of fresh weighs. Why is it grown in Turkey and not US?

Great question. When we launched our Organic Spinach Powder, the only source we could find that met our quality standards was grown in Turkey. Since launching, we have been working towards producing a freeze-dried organic spinach powder that is organically grown and freeze-dried in the USA. We plan to make this change in 2-3 months and will update our label and product page once we do. Until then, the organic freeze-dried spinach powder from Turkey, is the highest quality available.
