Anyone use this for slicing biltong?

I use mine to cut frozen meat for jerky. it works very well. I've never heard of biltong if you freeze the meat, and it has no bones, it should work. Hope this helps.

Is the thickness of the meat adjustable?

Yes. There is adjustment screws on each end of the blade arm which by screwing in or out adjusts the thickness of the slices. I used an old chopstick as a gage to set both ends equally. I found the design to be commensurate with the price of the device; adequate and reasonable

Can blade be sharpen? Need replacement?
