Can I use this product to remove oil stains on Blue Stone?

I don’t know. Read the bottle and it does not exclude stone tho there are other exclusions. I’d give it a try if it were me.

Is this 66% better then regular greased lightning since it costs 66% more? the regular is pretty good.

Sorry--can't answer that as this is the only type I've used. Just looked for it at Home Depot, though, and it wasn't on their shelf, so I'll be ordering another from Amazon shortly.

Is this product unscented?

It has a strong chemical scent. Works great on everything.

Can you use it one Stainless steel appliances? Hood cover over range?

The back label states that the product can be used on anything from floor to ceiling, so it sounds like yes, it can be used on stainless steel appliances, and hood cover. I have not tried this product for that type of cleaning, though. I mainly use it on my shower tile.
