how long does it take to wash out? and does it completely wash off gray hair or does it stain it?

It depends. regular shampoo probably 6-10 shampoos. I use Wen so it lasted about 3 weeks. It stains grays but not as dark as my non gray hairs. The grays look like auburn highlights on me using #778. IF you have a headful of gray hair, you would need something more permanent.
