Love this Asiago cheese...
Love this Asiago cheese...now! Sorry for my previous review. Once you open the package, you must let the cheese "breathe" until it normalizes itself into its true flavor. Do not taste it immediately after opening its plastic wrapper since it may taste flavorless.

THIS DOES NOT TASTE LIKE ANY SWISS CHEESE I'VE EVER HAD. IT TASTE LIKE CARDBOARD.
SWISS CHEESE is one of the best cheeses as far as I'm concerned. I've eaten Jarlsberg, Baby bell swiss. UNFORTUNATELY this is not swiss cheese, if you like the taste of CARDBOARD buy this cheese.

Does not come sliced
Doesn't melt, stays rubbery, and has a super light flavor. Also does not come sliced, it's a little brick of cheese. It did arrive fresh and well before the expiration date.

Almost impossible to get the product out of the package. You will need scissors, a knife, and a small stick of dynamite.

Disappointing
I was disappointed. The texture is too dry and grainy. Smoke flavor is very weak. Not what I think of as good Gouda. Also, it seems to be more expensive than other brands. This might be okay, if your special health concerns are at the top of your list, but I also want the cheese to be enjoyable. This cheese does not melt. Instead, it forms a dry skin on the outside and merely softens on the inside. It does not flow together. It is not what you would want for making grilled cheese sandwiches. The best way I have found to use it, is to grate it and put it into a salad. That helps to overcome it's shortcomings.
