do you think it would handle a brisket moving from smoker to table for wrapping

It would probably be fine, but I wouldn't go over 10 lbs. I just put a 10 lb box on it, and it was fine, but I had to use a firm grip on the metal part of the handle. More than that, and I think you'd be risking bending/breaking the handle.

What are the dimensions exactly? It does not specify which dimension is the blade width and the blade length.

The blade is 14" across. 16" to the very back of the blade, and 13" to the point where the handle starts. I hope this helps!
