How easy is it to refill water? Can you do it without taking apart the sink?

Yes absolutely. There is a white cap on base that you open and fill the water into.

So long ago, maybe over three feet in all directions; a square box, you assemble!

Is the wash basin supposed to snap into the pedestal? ours Kinda sits on top but it's not snapping into the pedestal securely.

I had a hard time getting the things to line up as instructed, when I put the sink on I gave it another try and it locked into place, be careful not to damage anything, take your time till it clicks into place. The sink locks onto the pedestal, again it was hard, I got it all done after reading it over again.

Are there two holding tanks...one for fresh water and one for the used water located in the bottom piece?

Only one holding tank for fresh water... I have a separate jug i use for the used water then dump it..these are actually meant to be attached to a porta potty and use the used water to flush those
