A.C. Legg - Mild Italian Sausage Seasoning - 8 Ounce

OK so I tried something different for my pizza sausage. True Italian sausage links are typically a simple salt, pepper and fennel mix as everyone in my Italian family uses. Anise is also sometimes used but too licorice for my taste. But for Pizza sausage this typical recipe does not taste the same as my favorite Chicago style tavern style pizzas I've eaten for the last 50 years but great for sandwiches with peppers and onions. I bought this and decided to make things simple and used a Tyson 15/85 ground pork from Walmart and used this seasoning plus a 1/4 teaspoon more and it was very nice for pizza following the ratios. I made 48 ounces on this first try. A pork shoulder fresh ground with a 70/30 should be better as typically used but thus far I have not tried it and want a leaner sausichee for my pizza. Bonus tip and highly recommended! Put it in a jar and shake all the ingredients as the seasonings with settle and needs to be given a good mix before using. Excellent product for mild Italian sausage. If I don't tinker with it more I would be happy with how it is as I used it. However, I'll add another extra 1/4 tea next time to jack up the flavor profile for pizza sausage.

My first mistake with this product was to taste a tiny amount before I used it. The mix was Extremely salty! I should have read the directions first! Lol. You use such a small amount per pound with this product, it will last a verrrrry long time. It turns out that the product was very tasty when used correctly! 😀 I will admit that I used more of my own spices with it, which is not a problem (garlic powder, parsley, grated cheese, a little hot pepper.). I like sausage a bit spicy but ordered the mild as I wasn’t sure how hot the mix was so I played it safe. Overall. I’m pleased with the product. The 4 stars is only because, for me, I would have liked to taste a bit more fennel.

I gave up pork 5 years ago. My husband has not but will eat turkey pepperoni and turkey kielbasa. But when it comes to sauce or dishes that call for pork I use this and he does not know the difference. So so good. You won't be disappointed. I make a Italian Tuscan Soup that requires sausage and this works perfectly with the ground turkey. Can't tell the difference.
