Can the seats be adjusted to make a one person Kayak with a single seat in the middle?

Yes it can, both seats are attached by velcro so on can be removed without any problems. I have used it as a single occupant with no problems the only thing I would suggest is getting a different pump the one with the kayak has no pressure and after a few hours trying to pump it up someone ended up lending their high pressure pump and was inflated within minuites.

Where can i get replacement parts

I dont know but I would try from Intex directly.
