Will this machine work on 11 inch wide roll?

Most definitely, I bought and have used 11 inch wide rolls

On the video it appears that the person has to push down rather hard to snap it shot. I am an arthritic person will I be able to close it easily when

I thought I’d be sending the sealer back because the lid was hard for my arthritic fingers to close. I am, however, able to close each side pressing down with the heel of my hand. I’ve also noticed it gets easier to close with use.

Does it seal aluminum bags?

It will seal the aluminized chip bags but can't vac them without a wick ( I use the thin foam they use to stack plates etc.

Are these bags also good for freezing?

Yes, that's what I bought them for and they seal really well. It helps to partially freeze the meats so the machine doesn't suck up the moisture. Otherwise the bags won't seal properly.
