Based on the package images (and a little math), this is about how many pieces are claimed to be in each bag for each breed size:
Mini (4 oz): 49 pieces @  1/8 oz
Small (12 oz): 34 pieces @  3/8 oz
Small Soft (12 oz): 39 pieces @  1/4 oz
Medium (18 oz): 31 pieces @  5/8 oz
Large (18 oz): 22 pieces @  7/8 oz
Large Soft (18 oz): 20 pieces @  7/8 oz
X-Large (24 oz): 21 pieces @ 1 1/8 oz

If you're interested in the algebra behind this, the package weight (g) is on the front of the bag, and calories (kcal) per kg and per piece are on the back. So:

Question 2

Has anyone every cut these sticks in halves or thirds?  If so, how do you do it?  It seems too resilient to cut with a regular steak knife?

If anyone is still looking for additional ideas, here's another quick and easy option -- Amazon sells this product in a "mini" size.  It's as though you cut off little slices of these sticks yourself.  They're very handy, esp for tiny dog breeds. :)  They're listed on Amazon as "ARK Naturals PRODUCTS for PETS 326066 4-Ounce Breath-Less Chewable Brushless Toothpaste, Mini."

My dog gobbles anything fast. Does it take a while to chew?

No, my GSP gobbles his in about 15 seconds.  That is with me holding it, so he can only get one bite at a time.  Both my dogs LOVE them!! My Lab mix is a little more reserved and takes all of 30 seconds and he really chews each bite.
