If you were to pull on any one side, how much space (in inches) could you create between rack and plastic at max? Wasn't sure "tightness" of cover

1-2 inch, cover is not a tight fit on rack. Plenty of space.

One end has one zipper to fold back the other end has two zippers so the flap can be lifted up and rest on top of the rack for access

What size pans does this take?

Full size restaurant sheet pans. Half size also fit if you turn them sideways

where are the zippers located? is is easy to unzip to access the pans inside?

There is a zipper on each size, total of two. If you unzip both zippers you can then flip the flap up and over the rack. Trays can easily be removed.
