How far apart should these be planted to form a hedge?

Hi Linda I planted mine 18" apart and are doing well. I've cut each tip of the branch back by 1" this will force side shoots to grow from each leaf joint and thicken up the laurel plant while still young. Hope this helps.

How often should I water them

They need watering regularly in dry spells. I find when we have a lot of rain they grow more.
