This is pretty good flour!

Good for Baking
I really like this pumpkin flour. It has a good flavor. I was surprised how well it works as a flour substitute for baked items. It does absorb a lot of liquid, so I mix some liquid with it first and let it set a while. Then I add any other ingredients.

A good substitute when baking muffins for high carb flours.
I like that this pumpkin flour is gluten free and non GMO...I basically use this flour as a "filler" flour when I bake flourless oat bran muffins. The funky odor and flavor gets lost in the batter because I'm adding spices like ginger, cinnamon and cardamom...and until I found a gluten free flour substitute that didn't spike the carbs, I was trying a lot of different flours...So I've settled on using pumpkin flour...about 1/3 - 1/2 cup combined with 2 cups of oat bran...2 eggs...baking powder, (2 tsp), spices, 3 T of oil, 1 cup of a vegan milk...I also add 1 T of ground flax...1 cup of dried blueberries and 1 T of honey, a tsp of vanilla...and...If it needs to be sweeter I use a liquid date syrup (a few drizzles)...and a few drops of stevia......Thanks to this pumpkin flour, I've perfected a healthy breakfast muffin by playing around with the perfect blend of dry ingredients...I think if I were using just pumpkin flour in any other recipe, this would be a pretty expensive purchase but otherwise for the small amount I'm using, this is working for me.

Smells just like pumpkin!
We have an Australian Shepard dog that has anal gland problems. Our vet recommended pumpkin, which the dog loved, but I thought I could do better. I tried drying pumpkin and grinding it. That was too much work. I have purchased this pumpkin flour several times and it is the base for what I give my dog twice a day. After about 2 years he still loves it and have had no further issues with his anal glands.

Do not buy this flour
I bought this pumpkin flour for my sisters birthday since she is gluten free. I was so excited to try it and was going to make pumpkin gnocchi (pumpkin, pumpkin flour, ricotta etc). Upon opening the bag I questioned if I should use it from the clay-like smell. I SHOULD NOT HAVE USED. I spent an hour making this gnocchi and I spit it out upon tasting. Not sure who wrote these other amazon reviews, but the flour tastes and looks like dirt. I should have read more reviews not on amazon. What a disappointment. Do not buy this flour.

I am a repeat buyer
I have to make my dog's food at home and I occasionally make it too watery. My dogs love pumpkin and sweet potato so I stir in a teaspoon and they eat it right up. I will continue to buy these.

Good quality but strong flavor
I baked cookies but the flour has a very strong flavor. I will be using 1/2 regular flour from now on to get the nutrition and pumpkin flavor without it being too strong.
