Q: Does this have a red dot/X/cross-hair so you can see where the gun was aimed whilst shooting clays/birds?

It has a red dot and you have to line it up with the aim point but it’s just a reference. I would not use it as a sight.

Q: Can the camera be used while plugged in and being charged (like a dashcam)?

If the camera is plugged in charging it will not be able to record.

Q: Will these fit or work on a crossbow?

Yes but you need the mount sold separately.
