Wonderful product would buy again.
This was easy to make by reading the instructions. The flavor and consistency was good. My kids lovedit and it is definitely something I would buy again especially during summer as it makes a great ice cream. I used my electric ice cream maker and within 30 min had some yummy gelato.

Don't make by hand
The flavor of these Junket mixes is amazing. This gelato truly is strawberry CHEESECAKE flavored, and not just plain strawberry. It's delicious. It's also ridiculously hard to make by hand. On paper, it's easy enough. Mix the ingredients, freeze, break apart, whip up, freeze again. In person, however, it's tricky. Mixing the first time is easy. Putting it in the freezer is easy. Waiting for it to solidify is hard—it took over a day for me. If you try to whip it up too early, it melts because it's not fully frozen, and when you refreeze it, it gets ice crystally and tastes like freezer burned ice cream. So for this flavor, I let it freeze fully, then took it out and tried to break it up with a fork. One bent fork later, I chopped it up with a chef's knife, and that was a pain in and of itself. Took a lot of jabbing the point through and then leaning all my weight on the handle. As I chopped, my fingers froze and the gelato melted, even though I was using a metal bowl I'd put in the freezer beforehand. Then I had to whip my chunks of gelato, and that was also too hard. The beaters just wouldn't whip up the frozen rocks of gelato. It took more time (and more thawing) to get it to anything resembling a whippable state. I did my best, then put it back in the freezer for a refreeze. When I went to scoop myself some, it was like trying to scoop a rock. Maybe sandstone. I was able to chip off slivers of the gelato using a scoop soaked in hot water and rinsed in hot water after every scoop, but the slivers were so thin that they melted almost immediately. By the time I got myself maybe one full scoop's worth of gelato in my bowl, it was basically strawberry cheesecake soup with a few chunks. Still had a delicious flavor, though. I don't know if an ice cream maker would make this any easier. I've tried two flavors now and struggled both times, but I don't have an ice cream maker to try that way. If you have one, maybe it'll be better. Again, the flavor is excellent. Just don't try to make it by hand.

Worth the work
I made this by hand, and I thought it was worth the work. The flavor was spot on, and the end result was creamy and delicious. Here's a few tips to help you if you don't have an ice cream maker. 1) When initially mixing the ingredients together: do it by hand with a spoon. 2) Once you pour the prepared mixture into your pan of choice, I recommend covering it with foil. This will help keep prevent freezer flavor/icing. 3) Be prepared to let it freeze solid. Time could actually vary I think on your freezer and how full it is. I just left mine overnight and that worked perfectly for me. AND, last but still super important. 4) When you are ready to break apart and mix with an electric mixer, Remove the pan from freezer and let set for maybe 10 minutes on the counter. (Trust me, this is probably the tip you'll thank me most for!) This will make the breaking into pieces with a fork SO MUCH EASIER and it will also help prevent chunks from flying from your bowl (Use The deepest bowl you have and don't be afraid to use a bigger bowl than you might think you need) while beating. Once it is beaten well, get it back in the pan, recover it and back in the freezer it goes. Freeze again until solid and it's ready to enjoy. I kept my finished gelato covered, in the freezer for three days and the last day was every bit as tasty as the first. If you have the time, patience and are a few helpful tips to aid you, I think you will love this product.

DO NOT BUY!!!
DO NOT BUY! When I took it out the package, the powder was in one solid brick. Tried to break it apart and it wouldn’t. Then put it in the liquid hoping it would dissolve…it did not.

It's ok...
The directions are easy to follow. The powder takes quite awhile to dissolve. I actually poured this into my ice cream maker, noticed a bunch of undissolved powder and poured it back out to mix it more. The flavor is ok, nothing spectacular, but what I really didn't like was the unusual aftertaste it left in my mouth. This could be a fun project for parents and kids to do together, but as someone who's made many batches of homemade ice cream, I'm going to stick with DIY.

Not as good tasting as other company's packages

Quick and easy dessert
Junket Gelato Mix: Strawberry cheesecake 4 oz box. Gluten free, contains milk. This came in a little plastic bag inside a cardboard box. The powder was very fine in the bowl, a little on the dusty side, and slightly pink-tinted. I mixed it with whole milk and heavy cream, as directed. Then poured into my prepped Cuisinart ice cream maker. I was a little skeptical because I tasted the powder with my finger and it just tasted like Jello mix. Within 10 minutes of running the liquid had turned into a beautiful, thick, smooth cream. It tasted like a mild and yummy strawberry flavor but I didn’t get much of the “cheesecake”. As for troubleshooting, I would just recommend making sure to stir this well to dissolve all the lumps before making it. I did have a little bit of trouble with that and had to apply extra elbow grease. Aside from that, if I saw these mixes at my local store or on a sale I would definitely consider getting again. It was tasty and easy to make, but not “out of this world”.
