Why doesnt it say aluminum free on the packaging if it is aluminum free??

I purchased if for additionally not having cornstarch, and the package doesn't say cornstarch free, either. What it says it does contain is Potato Starch, Sodium Bicarbonate & Sodium Pyrophosphate.

Not sure. I bought this because it did not contain aluminum. I use it for some non-vegan purposes. But the product by itself, I can’t answer that question.

Is this a single acting (opposed to double acting) baking powder?

It’s double acting. It has both sodium bicarbonate and sodium pyrophosphate.

Why does it not say Aluminum free ON the can ?

In a way, it does, by the lack of sodium aluminum sulfate in the list of ingredients.

Aluminum free!!

You'd may be shocked how hard it is to find an aluminum free baking soda! Do yourself a favor -- throw out your old baking soda and buy this instead! This one fits the bill and delivers beautifully baked goods. The rise I get on on my cakes has been great.
