Will this work with a 7mm SSD?

Should have no issue. I am using a Samsung SSD 850 EVO 250 GB and is about 6mm thick. When I slot it in there is plenty of space to accommodate 7mm easily.

Is this enclosure covered in both sides? I want to use it as an external hard drive and I don't want only one side covered...

Yes, it is closed on both sides. However, it was not meant to be used as an external drive, but it could be used that way. James

Can i use my existing ssd and add a second ssd and the computer will boot normally and see that i have two drives even if i use only one sata port?

The 35SAT225S3R supports JBOD - (Just a Bunch of Disks) which will detect both drives independently. The host computer's SATA port must also support Port Multiplier which enables you to access more than one SATA drive from a single SATA connection. Atha, StarTech.com Support
