Works great for making a cheese sauce.
I used this to make cheese sauce with milk, cheddar cheese, and a little bit of crushed red pepper flakes. It worked well, creating a silky texture for the cheese. Very easy to use, simply add a small amount, depending on the size of your batch. A little goes a long way, start with a little and see if you need more. It does not seem to affect the taste of the cheese sauce very much, which I find to be a good thing. Because a little goes a long way the size of this package should last most home users for a long time. Seemed like a good value compared to the others I have looked at. An excellent emulsifier.

Great product for making the smoothest cheese sauce! Good value.
Outstanding product and LOTS of it. You only need a tiny bit to whip up a super smooth cheese sauce from real cheese that won't break into an oily mess. Natural and without flavor. I finally found this after 47 years of cooking without it, and I'm really glad I did! Bag seals tightly for storage; I suspect it last forever.

Great for electrolyte mix.
I use this as part of my electrolyte drink mix for cycling and go through about a bag (used to be 1lb, now 14oz) per year. Works great! I've noticed the price per oz. is going up about 10% per year so buy early.

Smooth maker
Did exactly what it was supposed to and made my nacho sauce smooth and wonderful. Very easy to use. I'm not sure still if when you add it matters but I've been tossing it in at the same time as the spices (~1t per cup of liquid) and it's been working fine.

It's sodium citrate
Sodium citrate is a magical ingredient with so many uses. The problem is, not many people know about it so it's quite rare. So when a recipe I found wanted this strange magical ingredient, I tried to find it, but couldn't find any physical store that carried it. So I did some comparison shopping and came here. Characteristics: - Fine texture, not unlike finely ground table salt. - Resealable bag that looks identical to the photo, sans "Large 14oz Bag" sticker. - The best way I can describe its taste is that it's like sour salt that doesn't quite taste like salt. You are probably not buying this for its taste, but Amazon wanted me to talk about taste so here we are. Good: - So far, I only found one thumb-sized clump, which wasn't a problem for me. - Bought June 2026; does not expire until Dec 2027. - Ships fast. Came the day after I ordered at no extra cost. [I have Prime.] - Great entry level amount; the bag is quite slim and can easily fit in a crowded pantry. At $10 for 14oz, it is quite hard to beat without getting into substantially larger amounts. Bad: - Amazon incorrectly shows the per-unit price as 62ยข/oz because the listing believes the product to be 16 oz and not 14 oz; the correct per-unit price is therefore 71ยข/oz. [Perhaps it considers the weight of the bag.] Still pretty cheap. This is the only reason I'm deducting a star. - All other reviews with pictures show problems with it and because it is a food product, it cannot be returned. Mildly risky, but with enough 5 star reviews I decided to bite the bullet. - Bag is a bit tough to open first-time, I was concerned about damaging the seal which I have done with similar bags. Other than that, because it is resealable, it is quite easy-to-use. Overall, I think this is a fairly good option if you want to make a few recipes that need sodium citrate: it's cheap, it gets the job done, it lasts a while, and it's compact. If you want bulk quantities, I suggest looking elsewhere.
