Love, love, love
Bought this one to replace my plastic Börner V slicer purchased at the Pomona fair over 15 years ago. The plastic is still usable but during persimmon season I use the thick slice mode to prep the persimmons for dehydrating. My plastic one was starting to discolor and the slicing became difficult. I had purchased a stainless steel mandolin last season and really struggled with it more than with my plastic Börner V slicer. Resolving to replace my old Börner with a new Börner I happened across this one in Amazon. Luckily, I had ordered this well in advance of its use because it was delayed twice, it comes from Europe. My persimmon slicing was a breeze, yeah! It doesn't clamp onto bowl like the old one but it did rest on the bowl well enough to get the job done. There are only two size of slices, thick or thin. There are two other blades that are used for julienne thick or thin. These also are used for dicing by rotating the vegetable by 90 degrees before slicing. There is a stand to keep all the pieces together on the countertop. The blades stay sharp and is easy to clean using a small brush. I recommend getting cut resistant gloves because we all know how many of us use the safety vegetable pusher.

Stainless steel costs a little more, but will last forever
This is a wonderful mandolin slicer that will last the rest of my life. I did not want plastic. This costs a little more, but when I need the mandolin, I really need it at harvest time to make dried persimmons, it's priceless. This saves so much time. It has multiple different blades And it is very, very sharp. I recommend buying a pair of the no sliced gloves for your safety.

The slicer is pretty sharp, good thing. Available instructions on use are very limited relative to use and blade changes. It took a while to figure it out. Like 2 weeks. It does work well with onions, tomatoes, cucumbers... Smaller vegs like celery are difficult.

Fewer features. Meh.
My 15-year old plastic Borner has many more features than this one. It has the ability to slice superfine (3 settings). This one has two. The side notches to set the julienne blades has disappeared, giving fewer thickness options. Hence I cannot dice with this new version without marking the vegetable with crosshatches with a knife. The earlier version did not need a knife for dicing. Score in one direction, rotate 90 degrees, and dice. The holder for the blades is really crappy in the new one. It has no safety lock and is much thinner plastic. If you turn it upside down, the blades will land right on your foot. I am using the holder from the old version to keep the new blades. I need a Benriner slicer mandoline to supplement this one for extra-fine slicing. The only thing going for the new one is that it is stainless steel and black - sturdier body and will not show stains. In terms of performance, it is a big letdown if you are used to the 20-year old Borners. The newer plastic ones are even worse - flimsier all over. The relentless lowering of quality and function for cost-cutting continues.

High Quality - Does the Job
I got one of these for my wife. It does a great job of slicing and grating. It's very well made--as most things made in Germany are. It's very easy to disassemble for cleaning. Just be careful, as the blade is VERY sharp! Follow the directions and you should have no problems!
