Fantastic pan, perfect for two eggs if used with a lid
I ordered a lid for this separately, as I don't like snotty eggs so I use a lid to cook them on top without needing to flip them. It turned up and was TINY.... I thought i'd messed up with this order, it looked like one of my daughter's toys. But once the pan arrived and I tried it out it was an absolute triumph. Perfect size for two eggs with a nice thick, light egg white. Having carefully followed the instructions to season the pan and then, when heating it back up for first use, ensured the pan temperature was correct for the Leidenfrost effect using a drop of water before putting oil in after it had evaporated, the eggs bubbled beautifully when dropped in and did not stick even to the sides of the pan (they did slightly, but nothing gentle peeling from the edge didn't fix). What I would say is that you need to order a small spatula/fish slice for this pan as normal ones are too big. Some reviews complained about the handle getting hot; it does about half to two-thirds of the way up, but the end remained plenty cool enough to hold throughout. I just used the end of the handle instead of grabbing the whole thing, which is anyway an uncomfortable shape. This pan is genuinely fantastic, especially for the price.

My favourite egg pan
I've avoided non stick pans and this does the job perfectly. Works in gas, induction and electric hobs - the size is perfect for a perfectly round medium or large egg. I use a mini wooden spatula and with a bit of oil it's very non stick. That said - you need to season and look after this carbon steel little pan with a little love, after a gently clean, wipe dry and smear a little oil to maintain a I’ve steered clear of non-stick pans, but this one does the trick perfectly. It works seamlessly on gas, induction, and electric hobs. The size is ideal for cooking a perfectly round medium or large egg. I use a mini wooden spatula, and with a bit of oil, it becomes incredibly non-stick. However, it’s essential to season and care for this carbon steel little pan with some love. After a gentle clean, wipe it dry, and smear a thin layer of oil to maintain a rust-free pan. Even if it does rust, it’s very easy to fix. Perfect Pan
I gave this pan a really good scouring with pink stuff and hot water. dried it off and seasoned with a tiny drop of sunflower oil Every time I use it it gets more non stick, eggs just slide out, perfect for black pudding, but I never fry tomatoes or anything acidic in it. Handle gets warm but just use a tea towel etc. Brilliant little pan, will last a hundred years I am sure, no nasty teflon and easy to keep clean. Whats not to like? Any one who complains that it goes rusty should stick to takeaway meals. Thank you for reading this.

Most amazing little pans ever!
I bought 2 of these pans because I wanted to make small tortilla de patatas and these pans can not be more perfect for it. I need to work on my potato sizes in the tortillas, but that is not reflective on the pan. I've done fried eggs in them as well, comes out absolutly perfect round, does not stick, it is amazing. I've had such a positive experiance with these, that I am now looking for bigger size De Buyer pans to replace all my other pans.

Handy addition to the kitchen
Tidy one-egg fryer and Scottish Pancake pan. Non-stick process (repeated heating of oil until it smokes) can be lengthy and heavy on the extractor but worth the effort. Was surprised that the handle....which is the same heavy gauge as the pan...doesn't get too hot but for the "quick cook" items it's intended for it hasn't the time. Have also used it for kids size Chinese crispy duck pancakes - perfect.

Does what it says but could be cheaper
I'll start with the major drawbacks - price and handle. This pan is waaaaayyy overpriced. I bought this for £20 and you can get a 24cm carbon steel pan from de Buyer for £22. Not to mention the other companies making pans. I just don't see a reason for this to be £20. If it were cheaper, I'd probably get another one or more. Another major miscalculation is the handle. This is not that big but basically, you cannot touch this pan without gloves. The handle could have been a bit longer. I use this pan on the lowest heat setting on the smallest stove top (gas) and within a couple of minutes, the handle is untouchable. I don't mind this much but I wonder if the handle were longer how much easier it would have been to use the pan. Keep in mind that because the handle is so short, grabbing it with a towel or glove isn't that easy either. So you really need to use a hand but it's too hot. I feel they should have thought about this when designing the tool - certainly would warrant the high price. Otherwise, and this is very personal - this pan fits really well into my lifestyle. I use it often to make eggs and burgers. If I cook something for myself it is just large enough. Really, it's a burger pan for 1. As I said, if it were cheaper, I'd buy several of these but at this price I'm looking at £80 for 4 but then operating more than one pan with these short hot handles is dangerous.

Brilliant
I've been looking for a mini frying pan for ages for my new induction cooker. This fits the bill perfectly. I'm in the process of building up the seasoning and so far its worked beautifully on my cooker. Lovely quality product. It should last for years.

Super Brat-Erfolg!
Ich habe schon lange eine nicht zu große Pfanne zum Anbraten von Steaks usw. gesucht. Beim Stöbern bin ich auf die Pfanne von De Buyer gestoßen. Preislich sind sie recht attraktiv, meine gewählte Größe (26 cm) ein schönes Zwischenmaß! Was soll ich sagen? Die Pfanne brät super! Ich habe sie nach Anleitung einige Male eingebrannt. Beim ersten Steak schon ist nichts angebrannt! Da kommt Edelstahl nicht mit, die meisten beschichteten Pfannen können die hohen Temperaturen nicht ab. Klare Kaufempfehlung! Jetzt hätte ich am liebsten noch eine große Pfanne, die einen glatten Boden für Bratkartoffeln o.ä. hat. :)
