how is alkalinity defined? How does it differ from pH?

Alkalinity is how good of a buffer you have. If your total alkalinity is low your ph can change and have larger swings which is very dangerous to fish.

How do you test if it’s reading correctly? For all I know it could be incorrect?

Most pet stores will test your water for free. See what they say your water is and then check it with the strips. I have 3 tanks all are different and I get different readings.

What is the shelf life of the strips after opening a package? And what is the shelf life for packages that are unopen?

When unopened its usually between 1 to 1.5 years. After opened i think its about 6 months.

Does it test for ammonia?

No, ammonia strips are always sold separately by themselves
