Can the yoke & white be blown out, decorate eggs?

I haven't had any problems with the white or yoke being blown out. Just make sure that you get a clean puncture in the egg.

Can this be used as a replacement for Dash egg cooker piercer?

If the piercer has something on it, it can push it into the egg. So, can it be disassembled for proper cleaning? Can it be placed in hot water?

It has a needle on it - you push the egg onto it. No, I wouldn't disassemble it, but you can use a dish cloth to wipe off the needle. Yes, its washable but I wouldn't put it in the dishwasher.
