To what temperature are these gloves resistant?

I do not know exact temperatures. These gloves are used for handling a wood burner, which gets extremely hot. They are perfect for this as they are rugged and well-made. Don't wear them for handling red-hot fire irons or live coals and logs though!

How do these hold up longer term, especially picking up dropped coals/ embers etc?

I use these gloves whilst tending the log burner in the house which also burns coal briquettes, they do protect your hands for short exposures to heat and handling the hot door handles. I have picked up burning embers and coals that have fallen to quickly throw them back into the fire and they will protect your hands but not to hold the hot coals or embers for long... you need the Kevlar gloves for that. They are now black from the coal but have not worn or burned. They would go well on outside fires and barbeques for blow torch use. They are comfortable to wear as the inside has a lining not just raw leather. I've used one pair of Kevlar gloves each year of operation as they do burn but protect your hands for much longer, but as I said one per every year (3rd year) I think these leather gloves will last much longer but mine are now grubby from handling the coal briquettes which doesn't bother me.
