Q: Hello. Please, i wanted to know if it floats flat on the surface of the water or it floats with one end on the water surface & the other in the water?

Usually floats flat, but occasionally water enters hole at bottom and head sticks out - just lift out of water and empty and will float flat again.

Q: This thermometer has just leaked red liquid into my baby's bath. I'm glad to know that it isn't mercury but could you tell me what it is please?

I believe it is alcohol (ethanol) with red dye, but there might be options.
